NOMOSU is founded by Japanese-Swedish female founder Sakiko, who grew up in a gourmet food family in Belgium. Inspired by her Japanese grandmother, an entrepreneur who sang and laughed for 100 years, Sakiko saw how one can live long and well. While working in London, experiencing energy dips and suffering skin, Sakiko did a 2-week no-sugar experiment. Stunned by the step-change in energy, focus, and euphoria she felt daily, she wanted to keep this new state of wellbeing. However, she missed chocolate, and asked: “Is delicious and healthy sweetness possible?” Probably not – she thought. Existing products are either not honestly sugar free, using dates or honey, with the same grams of sucrose, or have synthetic sweeteners that have poor taste and health outcomes. Studying Metabolic Science, she learned about sweet ingredients in nature that are not sucrose/fructose, some that are even actively health-enhancing. Creating sugar free cookies and opening a bakery, NOMOSU was born. To create healthy food products, Sakiko felt she needed nutritional biochemistry knowledge, so studied a 4-year Masters in Science (MSc) degree in Personalized Nutrition and Functional Medicine. Via cell taste receptor science, intestinal health research, and culinary art, NOMOSU’s team created the world’s only taste award winning, sugar free chocolates, winning 4 global taste awards, competing with thousands of products, most sweetened with sugar. By pursuing peak health and deliciousness, NOMOSU created organic chocolates that include calibrated amounts of prebiotic fiber that improve the diversity of the microbiome and the short chain fatty acid production of the commensal bacteria, and the only organic, A2, grassfed milk chocolates in the world.
