Olivaki

Olivaki started with olive oil - and a question. A chance introduction to Xenofon Stavropoulos, a Greek geologist turned organic olive farmer in the hills above Patras, led to a taste of oil unlike anything found on a shelf. It was unblended, early-harvest, and unmistakably alive - green, peppery, and full of flavor. Friends and family who tried it all asked the same thing: where can I buy this? The answer was nowhere. Greece produces some of the finest olive oil in the world, yet roughly 80% of it leaves the country in bulk, sold at near-breakeven prices to Italy and Spain - repackaged and rebranded under someone else's name. Small producers like Xenofon's estate had the skill to grow exceptional oil, but no route to bring it to market under their own name. That gap became the reason Olivaki exists. We partnered directly with a single-family estate in southern Greece to bottle and bring its oil to the U.S. and U.K - unblended, traceable, and true to its harvest. No mixing. No mystery. No "packed in Italy" labels hiding Greek origin. Every bottle of Olivaki carries the name of the estate, the date of the harvest, and the place it was grown. It's early-harvest, cold-pressed extra virgin olive oil exactly as it left the press - nothing added, nothing taken away. Olivaki is proof that a better way exists: small estates, named producers, and honest labels instead of anonymous blends. It's our answer to an industry built on bulk and obscurity, and the beginning of a growing family of single-estate Greek oils. If it's not green, it's not Olivaki!
