Like most good things, our story begins in the kitchen. ?Katlin Smith's kitchen to be exact. Katlin had grown tired of looking at long ingredient lists on food labels and being unable to pronounce half of them. She thought there must be a better way. After all, muffins don't need 25 ingredients. So she decided to make her own.? ? It all started a while before that when Katlin ? like many people ? found herself working long hours, traveling a lot for work, and eating on the go. Which meant she was consuming a lot of processed foods. She wasn't feeling that great mentally or physically, and a friend suggested it might be her diet. Katlin had never really considered that what she was eating was having such an impact on her, but when she started reading those labels and changed her diet, sure enough, everything else changed too. It was an ah-ha moment for her: she realized just how much the food she was eating could transform the way she felt.? ? So Katlin got to work in her kitchen. She started with muffins made from natural, whole-food ingredients. Katlin would use her picky male friends with refined palates as an informal focus group for her products. She'd bring a batch of muffins over and always knew she had a winner when they would polish off three or four muffins in a row. Through lots of trial and error (it took 90 recipes!), she created the first three muffin mixes. Just like that, Simple Mills was born. In a home kitchen.
