After years in the food industry and a passion for great food, my wife, daughter, and I have decided to bring a rare Japanese culinary tradition to the US. We brew our Kioke Reserve soy sauces in a 200 year old brewery in Kanazawa, Japan, the way it was done in the Edo period, and slowly age it in cedar barrels. Less than 1% of Japanese soy sauce is made this way. Together, we hope to share our passion for tradition with everyone.
