Adlai Pearl started with a personal shift. I had stepped away from a fast-paced corporate life to focus more on my health and be more present with my family. Around that time, I was traveling in the Philippines and eating mostly plant-based and gluten-free, trying to keep things simple but still satisfying.. One meal changed everything. At a small restaurant called The Vegan Dinosaur, I was served a grain I had never heard of before. It wasn't rice, and it wasn't quinoa. It had a soft, slightly chewy texture that felt more substantial, more like a real meal. I remember finishing it and thinking, why isn't this everywhere? That question stuck with me. The more I looked into it, the more I realized this wasn't a new discovery at all. It had been there the whole time, just outside the mainstream. Not because it lacked value, but because it didn't fit the way modern food systems work. Adlai grows slowly as a heritage crop and has been a staple of Indigenous communities for generations. It doesn't respond well to shortcuts. Growing it requires patience. Some varieties are even used as prayer beads, which says a lot about the kind of crop it is. Bringing it to the U.S. became its own journey. Sourcing from the highlands meant building real relationships, navigating logistics across continents, and learning how to introduce something unfamiliar without forcing it into an existing category. It's not rice, and it's not trying to be. What kept me going was the reaction from people the first time they tried it. There's a moment where it clicks. It feels familiar enough to use every day, but different enough to change how a meal comes together. Adlai Pearl is about creating more of those moments. Giving people access to something that feels both new and like it should have been there all along.
