Launched in 2019 with Michelin-star and James Beard award winning Chef and Restaurateur Kelly Whitaker, Dry Storage is a flour mill in Boulder, Colorado. We seek to bring the best regeneratively farmed organic grains and flours that are more nutritional, flavorful and supportive of the grain and farming communities in the region. When Chef Whitaker moved back to Colorado after working in restaurants all over the world, he realized no one was growing and sourcing their grains locally nor were they milling it in-house for performance and freshness. By creating a relationship with a family farm in San Luis Valley, we learned that not only could we re-introduce non-GMO heritage grains to the region, we could also farm regeneratively to save water and add carbon back into the soil to combat climate change. Leading the way with flavor, stone-milling the grain with the expertise to perform to a chef's standard, armed with a mission to impact our communities and setting a pricing structure that could support the farmers, Dry Storage had its firsts proof of concept. Five years later, Dry Storage is an expanding, robust stand-alone business working with six farms growing regeneratively in Colorado, Utah and Wyoming carrying the following single varietals: White Sonora, Rouge de Bordeaux, Yecora Rojo, Winter Langin, Ryman Rye and Origine Spelt. Freshly milled flour is akin to produce or wine: alive, nuanced, and expressive of terroir. Like all plants, wheat tastes different depending on the varietal, the region, and the soil in which it's grown. Each of our grains have tasting notes influenced by their type and origin, imbuing even the most humble pastas and breads with complexity and elevated flavor. Dry Storage goods are purchased by over one hundred restaurants, bakeries, hotels, breweries and distilleries, including all five Colorado Michelin-star restaurants. We believe that Dry Storage is the mill of the future and can lift the category similar to what happened in coffee. When we disrupt the market with our superlative product and bold approach to the business, we can inspire consumers with us to improve every aspect of the supply chain.
