Rebel Cheese

We founded Rebel Cheese in 2019. It was born out of our desire for artisan vegan cheeses that could be used for date nights, dinner parties, or any other celebratory event. When we went plant-based overnight over a decade ago, gourmet cheeses were the thing we missed the most. We searched high and low for a replacement and found nothing to satisfy these cravings. We started experimenting, bought a four-bottle wine fridge to act as a cheese cave, and quickly realized the power of cashews, cultures, and time. This is when the idea of Rebel Cheese was born. Since many of our cheeses take days to weeks to produce, we wanted to make them easily accessible and decided to start with a restaurant. We opened the restaurant to a line out of the door, and it stayed that way until a few months later, when COVID hit. Like all other small businesses at that time, we immediately explored ways to pivot. We figured out how to ship perishables and started wholesaling to other companies. After a few months of successfully shipping, we had the confidence to start a monthly cheeses club. These two other business lines not only helped us survive COVID but also enabled us to scale and grow in ways we never imagined. We are now focused on scaling our cheeses nationally to retailers, which is one of many reasons we'd like to participate in Expo West.
