Unicorn

I grew up in Northern California in the 90s, during a time where the natural foods movement was gaining fast popularity. My mom jumped on this bandwagon, introducing alternative grains and legumes in my lunchbox and during dinner. Meanwhile after school and on the weekends I would spend my allowance on fast food, a favorite of mine being tater tots. A lot has changed since my grade school years and as an adult and expecting parent I am always on the search for finding whole ingredient foods to incorporate into my diet. I created Unicorn Tots for others like me who are trying to incorporate more whole, nutritious, and protein-packed plant ingredients (lentils and quinoa) while satisfying that insatiable junk food craving. And rather than use refined binders and fillers we use mushroom roots to create the fluffy and crispy experience of a regular tater tot. This is the magic behind what makes Unicorn Tots more nutritious and delicious than your ordinary tater tot.
