It is a very complex oil in the nose with green notes, in which prevail tomato plants and green apple. Hints of green almond, banana and ripe tomato can be appreciated in a lower intensity, with light touches of freshly cut grass.The palate has a fluid and fresh entry with highlights of floral notes, green banana and green almond. It is a fruity and quite astringent EVOO. The flavourpersists in mouth leaving a very fresh aftertaste. Medium intensity spicy taste in a very elegant way. The bitterness is slightly less intense than the spiciness.Use raw to enhance the flavourof dishes. Ideal for desserts, yogurt, ice cream and chocolate as well as pasta and meats
