Lil' Melts

I kept hearing that beef tallow was one of the best fats to cook with, so I decided to try it for myself. I went out, bought a jar, used it once, and put it in the fridge. The next time I went to use it, it was rock solid. Scooping it out was hard and frustrating. After a couple minutes of scraping at a cold, solid jar, all I had to show for it was a bent spoon and a few shavings of tallow. That same night, I ordered molds off Amazon. When they came in, I started pre-portioning my own beef tallow into cubes. My family started reaching for the cubes every time, while the jar just sat there untouched. That's when it clicked. The fat was never the problem. The format was. So I decided to build something around it, not because the fat needed to change, but because the way we use it does.
