The date 1598, as featured in our Modena Estense logo, not only marks the year that Modena became the capital of the Duchy of Modena and Reggio Emilia and the new Duke Cesare d'Este moved into the city with his family. It also marks the moment when the family encountered a flavor that would shape their destiny for centuries: balsamic vinegar. Whether the sweet vinegar was seen as compensation for the loss of Ferrara to Pope Clement VIII is not known.
