Started the business part time in 1983 selling fresh truffles and became the forefather of the truffle industry. When i started there was only 20 restos between NY & LA that used fresh truffles and 20 years later grew it to a 18m business. in late 1990's more and more truffle products contained artificial flavoring and the biggest was truffle oil. all truffle oils are artificially flavored and have nothing to do with real truffles. A famous writer Jeffery Steingarten wanted to write an article of fake truffle oil and asked me to help him. i said yes and did the research with him and i then decided not to sell these products anymore. this was the same time by book " Truffles Everyday Please, Everyday Luxury" came out on Wiley press and i needed to fix this business right away. i teamed up with Dr. Sandro Silveri and financed him to the tune of 400k euros to develop an all Organic process with fresh organic truffles. dr Silveri has a PhD in Mycology, Food Science, and Agrarian Science and he worked out the process 6 years in the making. we started selling in 2008 off to a poor start as the prices were very high, but by 2014-15 prices started to come down and sales started to climb. retailers are buying more as our prices come down and consumers are more aware that the other brands are just artificially flavored and have no real truffles at all. You want what is on the label? then pick up daRosario Organics and forget the rest. I work at this everyday letting retailers to stop deceiving their customers but it is a very hard road. for example supermarket X with 1,400 locations says they buy a grocery set and truffle oil is in it and thats the way it is. it isnt easy but we're at it everyday.
